Balanced flavors of candy corn, honey nougat, and sweet corn bread biscuits, with a finish of vanilla and caramel apple.High West American Prairie Bourbon is a small-batch blend of two straight Bourbons, a 6 year from Seagrams in Lawrenceberg, Indiana and a 10 year old from Four Roses with a higher rye content in the mashbill by comparison:6 year old Bourbon: Mashbill of 75% Corn, 20% rye, 5% barley malt.10 year old Bourbon: Mashbill of 60% Corn, 35% rye, and 5% barley malt.High West Double Rye – High West Double Rye is the result of combining a young, spicy rye whiskey based on 95% Rye, and a decadent 16-year-old milder rye whiskey. The older whiskey comes from a mash bill of 53% Rye and 37% corn. This sweeter style restrains the bite of the young rye whiskey without overpowering its charm, which is apparent when used as a sub for bourbon in a Mint Julep!High west Rendezvous – High West Rendezvous is blended from two exotic straight rye whiskies (a 6-year-old and a 16-year-old). The rye shows all of its power in the finish– menthol, sourdough, bright spices and lime zest. High West Rendezvous is pleasant and sweet – caramel, honey, and vanilla mingle together with little nostril burn.High West Rendezvous the large amount of rye in the mashbills combined with a 16 year old ingredient are likely what give this its wonderful balance of spicy and sweet.
